Rich and round, this XO is the result of the harmonious blending of eaux-de-vie which have been aged for many years in oak casks. Sourced primarily from the Fins Bois cru: a terroir celebrated for producing cognacs with a fuller, fruitier and more approachable character than the chalky grands crus the XO Premium is a masterclass in what time and well-chosen oak can do to even the most terrestrial of spirits.

A Terroir That Speaks Differently

While many premium XOs draw their prestige from Grande Champagne's chalky soils, the XO Premium is crafted mainly from Fins Bois eaux-de-vie, a cru that yields cognacs of remarkable breadth and roundness. The result is a spirit that feels immediately welcoming no sharp edges, no austere structure just layers of warmth and depth that unfold unhurriedly in the glass.

Under the expert guidance of Cellar Master Jean-Philippe Bergier, who has been the olfactory compass of the house since 1989, these eaux-de-vie are blended with precision and care, hitting an average age of 20 years a number that sits comfortably above the legal XO minimum of 10 years, and one that translates directly into the extraordinary richness you find in the glass.


Tasting Notes

Eye

A deep, luminous golden amber that catches the light like liquid honey. The robe is warm and dense, with slow, generous legs forming along the glass a visual testament to the concentration and age of the eaux-de-vie within. Inviting, rich and immediately impressive.

Nose

The nose opens with an almost theatrical generosity. Hints of jasmine and iris blend perfectly with the fruity aromas of banana and prunes, in addition to toasted hazelnuts, candied fruits, almonds and mocha. There is a beautiful interplay between the floral freshness of the iris and the dark, roasted warmth of the mocha a contrast that gives the XO Premium its signature complexity. Given a few minutes in the glass, subtler notes of beeswax, dried fig and a gentle whisper of old leather emerge, adding further depth and intrigue.

Mouth

Long on the palate, revealing the famous and delicate presence of rancio, this is the reward we get for the patience shown over several decades to get this just right. The texture is silky and full-bodied, coating the palate without the slightest heaviness. Vanilla, roasted hazelnut and candied stone fruit lead the way, supported by a warm current of spice and dark chocolate. The finish carries notes of cut hay and honey associated with wood tannins, revealing a supple and generous cognac that lingers long after the glass is set down. Exceptionally satisfying, and one that reveals new nuances with every sip.
