As a Fine Champagne cognac, it is composed of a meticulous blend of eaux-de-vie from the Grande Champagne and Petite Champagne crus. This "Premium" designation highlights the extra care taken in the aging process, ensuring a spirit that is rich in "rancio" and complexity.
A Legacy of Maturation
At Cognac Select, we recommend the XO Premium for enthusiasts who appreciate a deeper oak influence and a denser texture. The eaux-de-vie in this blend have matured in Limousin oak casks for an average of 20 to 30 years. Over these decades, the porous wood allows for a slow oxidation, concentrating the flavors of the fruit and integrating the tannins of the oak. Appearance: A deep, glowing mahogany with dark coppery highlights.
Nose: Powerful and remarkably wide. It opens with an intense bouquet of jasmine and honeysuckle, quickly followed by "gourmet" notes of dark chocolate, toasted walnuts, and dried prunes. A hint of spicy saffron and old leather suggests its significant age.
Palate: The attack is rich and enveloping. The palate is flooded with flavors of candied orange peel, honey, and vanilla bean. The mid-palate reveals a structured elegance with notes of cedarwood and a subtle, savory earthiness the hallmark of high-quality aged Champagne eaux-de-vie.
Finish: Exceedingly long and warm. It leaves a persistent, velvety trail of cocoa, gingerbread, and a final touch of floral freshness.
