The Spirit of the Fins Bois

The Fins Bois cru is renowned for producing eaux-de-vie that mature relatively quickly, offering a round, fruity profile even at a younger age. By aging this VS in fine-grained French oak for several years, the Delisle family ensures that the fiery spirit of the distillation is softened into a smooth, approachable liquid while retaining the crisp, floral notes of the original grapes.

Tasting Notes

Appearance: A bright, pale gold with shimmering yellow reflections.

Nose: Fresh and aromatic. It opens with an immediate burst of white flowers and vine blossoms, followed by the sweetness of fresh pear and a hint of citrus zest.

Palate: The attack is crisp and lively. On the palate, it reveals a delicate harmony of apricot and honey, with a very light touch of vanilla from the oak. The texture is fluid and clean, emphasizing fruit purity over wood intensity.

Finish: Short to medium, leaving a refreshing and floral trail with a subtle hint of soft spice.
